Purslane may look like an ordinary, useless weed but don’t be fooled by its appearance. This plant is a powerhouse of nutrients and other health benefits.
Purslane, also known as pursley, pigweed, or verdolaga, is very rich in omega-3 fatty acids, which improves your cardiovascular health and lowers your risk of heart attack, hypertension, and stroke.
It is packed with vitamins A, B, C, and E. In fact, purslane has one of the richest in vitamin A of all green leafy vegetables. Its vitamin E is seven times higher than spinach. It also contains minerals such as beta carotene, iron, and protein.
You can eat its leaves, stems, and roots. They’re all edible. Its slightly sour and salty taste is perfect for salads, omelette, soups, stews, and even sandwich!
You can also eat them raw. Make sure to wash it with warm water and store it in the fridge for 3 to 4 days.
